Here’s a delicious low-carb recipe for soft baked pretzels. These are gluten free and a batch of 6-8 pretzels takes 20 min from start to finish!
Here’s what you’ll need:
3/4 Cups Almond Flour
1 egg
2 Tbs Cream Cheese (full fat)
1 ½ cups shredded Mozzarella Cheese
*Sea Salt
*Melted Butter (2 tablespoons)
Preheat oven to 350F and prepare a cookie sheet with parchment paper, or by spraying it with cooking spray.
Measure 1 ½ cups of shredded mozzarella cheese and 2 Tablespoons of Cream Cheese into a microwave safe bowl.
Warm it in the microwave in 30 second increments. Stir it with a fork in between.

When the cheeses are well mixed, melted, and smooth, add in 1 egg and stir it in too.
Next, measure 3/4 cups of Almond Flour and add that to the bowl and mix it all together with the fork until it forms a dough. You can also mix the dough with your hands to get it even more blended.
With wet hands, grab a portion about the size of a golf ball and roll it in your hands. Work the dough until you create a rope -a little over a foot long is ideal.
To twist the Dough-Rope into a pretzel, shape it like a “U” with the middle part touching the baking sheet.
Take each end of the Dough-Rope and cross them over each other, then twist. Lay the twist flat and press it gently into the base of the “U”.

*Rinse your hands before rolling each pretzel for easier handling.

*Space the pretzels an inch or 2 apart.
Bake them for 15 minutes at 350.
They’ll be ready when they are golden-brown on top!

To finish them off, melt half a stick of butter and brush the baked pretzels.
Sprinkle them with Sea Salt and enjoy!

**These are also delicious when re-warmed (15 seconds is all you need)!
